If you’re trying to eat healthier but you’re short on time during the work week, all you need to do is find TWO nights per week to do meal prep for batch cooking.
Here are some ideas from my own fridge. My daughter and I eat different diets, but veggies and protein are part of both our meals, so I make plenty of those to have ready to go, and then we customize our own plates. If we need to heat up our meals, we use a mini-convection oven (5-10 minutes) and use an oven safe Pyrex dish.
If you don’t have time to peel and chop veggies, look for the convenience packets of veggies. They are more expensive, but a great option when you’re in a time crunch.
